Clean Lime Chicken Salad

Friends, this is my Favorite!! Crazy healthy and super yummy! The FUN factor in this dish is the Lime! It's tangy and pairs well with the meat and veggie combinations. I make different variations of this often, but this one is my consistent go-to. I also don't cook or eat a lot of chicken, so this dish definitely adds to my variety of meals. I prefer to make a pretty decent batch of it, as to ensure I can eat it for a couple days :)

This chicken salad is super versatile. You can eat it alone, a top cucumber slices, over a bed of baby greens, in a romaine or collard wrap or in the Summer, over a fresh, sliced tomato. When venturing out of Whole30, it's excellent mixed with Quinoa and makes a mean Taco or Burrito! WIN!

This has No mayonnaise in it and is strictly olive oil. I cook practically everything with or in olive oil. I like the flavor and consistency of oiliness. I'v played around with seasonings on this one too. My favorite for this recipe is now McCormick Gourmet, Mediterranean Sea Salt. (Publix) It's compliant and is a great chicken topping any time. I also use Cavendar's Greek when not going full-speed Whole30. 

So here is my delicious, and also pretty, Chicken Salad!


Clean Lime Chicken Salad

Ingredients:

  • 2-3 pounds white meat chicken, I prefer tenderloins
  • Olive Oil
  • Mediterranean Sea Salt
  • 1/2 purple onion diced
  • 1 whole red bell pepper diced
  • 1 whole avocado diced
  • Juice of 1 lime
  • S&P

Directions:

  1. Combine all chicken with 1/3 cup olive oil and 1 Tablespoon M. Sea Salt. Coat chicken well.
  2. Grill chicken or bake in oven at 350* around 30 minutes.
  3. Let chicken cool and cut bite-size.
  4. In a large bowl, combine chicken, all toppings, lime and generous S&P
  5. Add more olive oil here, per preference. Taste and add more S&P as needed.
  6. Seriously, Done!
