George's Hamburger Helper

I’m a child of the 90’s and grew up having an occasional “Hamburger Helper”. If you have no idea what I’m talking about, that is a gift. It’s a pre-packaged meal and recipe, and you add into the dish, ground beef. It’s typically a pasta and a mix of seasonings. My father always enjoyed cooking for us, but this was on the menu if he had minimal time, and didn’t want to eat out.

I strongly remember my brother and dad always loved it and my sister and I were more like, “what exactly is this?” Kuddos to my dad though, he still gets an A+ in effort and love when feeding his family! And he truly is an excellent cook.

When I began eating more whole foods a few years ago, I ended up with my own tasty version of “Hamburger Helper”. It’s hearty, it’s healthy and my personal favorite…it’s a one pot dish. I’m a fan of sticking to the basics and keeping it easy too. My kids like this meal and Farmer loves it.

It’s mostly meat and potatoes and you can add in any favorite veggies. This is a fall version and contains Kale and Butternut Squash. As always, onion is a must and it’s seasoned with simple Garlic Powder, Paprika and S&P.

You will absolutely enjoy this Whole30 compliant meal. Give it a try and remember to taste along the way for your personal perfection.

George’s Hamburger Helper

Ingredients:

  • 1 lb ground beef

  • 1 whole onion diced

  • 2 cups chopped kale

  • 2 cups diced butternut squash

  • 2 cups diced white potato

  • 1 tsp each Paprika and Garlic powder

  • S&P

Instructions:

  1. Brown beef over medium heat in a large, deep skillet or saucepan. Add in onion when meat has been cooked half way through. Cook until brown.

  2. Add in 1 cup of water and add in all potatoes. Cook 20 minutes, stirring often.

  3. Add in S&P generously

  4. Water will continue to be absorbed, cook 10 more minutes.

  5. Add in kale and butternut squash.

  6. Add in 1 more cup of water.

  7. Cook 30 minutes stirring often.

  8. Add in paprika and garlic powder.

  9. Stir generously and taste

  10. You may need to add another 1/2 cup of water here. Depending on the size of your veges. Taste and evaluate to your preference. Let this simmer 15-20 more minutes.

  11. Place in your fave bowl and enjoy!
