I'v always Loved Chili! My mother frequently made it in the Winter and I cook it year round because the Farmer Loves a Chili Dog! It's an easy one-pot meal, and tastes even yummier warmed up the next day!
This Whole30 version is adapted form The Whole30 book, by Melissa Hartwig and Dallas Hartwig. It is beanless and uses simple seasonings from your pantry: Cumin, Mustard Powder, Chili Powder, Paprika and S&P. I boiled and skinned my own tomatoes for this (very easy) but you can easily sub canned tomatoes, be sure and read your labels.
The sauteed Onion, Bell Pepper and Garlic add juices and robust flavor. These are staples I keep in my kitchen and cook with a few times a week. I'm using Bison as my meat but you can sub with ground beef or even ground turkey. Bison is very lean, you'll need to add in olive oil as needed to keep it cooking and juicy!
I first cooked this version about 3 years ago and it has been the only Chili I'v cooked ever since. And my favorite topping happens to be Sour Kraut. I never even ate Kraut until my first Whole30 but it is now a staple for me and has HUGE gut and health benefits. I do not make my own but I'v found a Whole30 compliant option at Publix.
So here is a my Yummy, Warm Chili recipe, Enjoy!!
Ingredients: 1-2 pounds ground Bison, 1 Onion diced, 1 green bell pepper diced, 1 red bell pepper diced, 3 garlic cloves~minced, 1-2 tsp Cumin, 1-2 tsp Chili Powder, 1 tsp Paprika, 1 tsp Mustard Powder, 1/2 tsp Salt, 5 whole tomatoes~blanched and skinned, (or 2 small cans diced tomato) 3 cups water
1. Brown meat in a large pot, add in olive oil as needed.
2. When meat is half-way brown, add in onion, bell pepper and garlic. Saute' all until veges are juicy and soft, about 20 minutes, on med-low.
3. Add in all seasonings including S&P. Stir all together for about 1-2 minutes.
4. Add in your water. I started with 2 cups.
5. Bring to a soft boil and let simmer about 20 minutes.
6. Add in blanched or canned tomatoes. May add more water here if you prefer your Chili thinner over thicker. (add in 1/2 cup increments)
7. Simmer over light boil about 20-30 minutes.
8. Taste for seasoning. I always taste my food quite a few times before its finished. We all have different flavors we prefer and palettes for tasting. It's fun to add a dash here or there and find out what's perfect for You!
9. Done!! Fun toppings for Whole30 include Kraut, Avacado and Hot Pepper.
10. Spoon into your fave bowl and Enjoy!!
